BBQ Ribs
Summers = BBQ. Right?! At least for my family, Summer is absolutely synonymous with BBQ. Nothing beats being able to soak up some rays and enjoy the warmer weather while you cook dinner. And, since we’re all already outdoors, why not just eat outdoors too? Gah! I just love Summers!
In the spirit of warmer months coming to join us, I thought I’d share one of the most simple, tasty recipes I have found for BBQ Ribs. Literally friends, it’s two ingredients and AH-mazing.
Now, I know what you might be thinking. Ugh! The BBQ. What a love-hate relationship if there ever was, right? I mean, I love to eat BBQ but the actual-BBQing-part is SO intimidating! I hear ya, friend. And confession: before I learned about this recipe, I didn’t even bother learning how to turn the BBQ on! (embarrassing I’ll admit – especially for someone who loves to cook dinner for my family as much as I do) But I mean, who wants to buy a good piece of meat and be salivating for dinner only to have it be ruined because they don’t know what they’re doing on the BBQ?
Trust me, this recipe will be your welcome into the world of BBQing. I promise it is anything but hard!
I first learned of this recipe when Pete, the kids and I all went over to a friend’s house for a BBQ. This was my girl friend’s husband’s favorite go-to BBQ dinner and I could easily see why. It’s a cinch!!!
Now I will warn you, it takes a bit of time. But Pete and I like this recipe for a Saturday or Sunday where we have nothing really else going on. While he has golf or football on in the background and we’re all sort of running around, in and out of the backyard, the grill is fired up and these babies are cooking to yummy perfection. They don’t take a lot of attention – just a rotation every 20 minutes or so. But, since we’re all running around anyway, I just set a little timer on my phone and when my reminder goes off, we rotate the ribs and keep on running around. It’s that easy!
So grab your sunscreen, a pair of tongs and your appetite. And cheers to many more BBQs in the coming months!!
- 1 package of baby back ribs
- Kirkland Signature’s Sweet Mesquite Seasoning

- Fire up the grill and get it up to 375 – 400 degrees F.
- Cut rack of ribs into sections of 4-5 ribs
- Massage a generous amount of the seasoning all over your ribs (both sides)
- Place your ribs directly over heat to sear them
- Once seared to your liking, cut off direct heat from middle of your BBQ; keep at least a couple of burners on so that you can maintain a constant 350 degrees in the chamber
- Stack ribs on top of one another, 3 slabs high
- Cook for 20 mintues at 350
- Rotate ribs every 20 minutes for 4-5 hours until meat is cooked thoroughly (rotation should be: top slab moves to bottom, middle slab moves to tob, bottom slab moves to middle)
