Parmesan Crusted Tilapia
I love to cook. I really do. I think I love it so much because I LOVE when my family or friends enjoy what I’ve made. It’s not just because I love to hear a good, genuine compliment – I mean who doesn’t, right? But I love when people really enjoy meal-time and what they are eating. And I especially love to find ingenious ways to get my family eating healthier and ENJOYING eating healthier.
But (you knew there was a “but” coming, didn’t you?) I don’t necessarily relish standing in the kitchen all day. Nor do I have the time. So there is nothing that I love more than a simple (7 staple ingredients or less), quick (45-minutes or less), healthy and delicious recipe. I am always on the search for inspiration and I’m always asking my family for feedback on how to tweak recipes to make them tastier.
This recipe was a fan-favorite from the start – even for my husband, who is not a huge “fish” guy at all. Tilapia is a lighter fish; not one of those “fishier” fish like salmon. So for all your family members who are not so into the “fishy” fish, don’t be afraid to give this one a try! You might just be surprised at how quickly they raise their hands for Tilapia Tuesday next week! Bon Appetite!
